Protein Pancake Muffins
Finally I am getting around to posting this recipe after so many of my followers were actually requesting it!! I also want to thank everyone who tried out my recipe for my black bean brownies!! It was so amazing getting all the sweet messages that you all loved them as much as I do!! So without further ado, lets get on these muffins!!
The inspiration behind these bad boys was actually a couple things, my boyfriends mom had made mixed berry muffins for breakfast one day and they were so so yummy I wanted to recreate a healthier version and then I was also wanting a breakfast meal I could easily pop into my bag in the morning before work. I looked on Pinterest and found a bunch of different recipes but most of them had a bunch of ingredients that I didn't posses so I looked at the most common ingredients and with my knowledge of baking I created my own recipe.
This recipe was pretty simple, I used vanilla protein powder, you can use any of your faves, water, baking powder, salt and maple syrup for the base! you can pick and choose what you want to add to your muffins, I tried frozen mixed berries and also did some semi sweet chocolate chips, I definitely liked the berry ones better.
This recipe base can also be used to make regular pancakes as well! I love that you can play around with this recipe too! I hope you all enjoy! and if you post a picture of your muffins make sure you tag me so I can see yours!!
